Xylitol is a natural substance produced in small amounts by the body and found naturally in fruits, berries and vegetables. Sometimes called "Birch Sugar", Xylitol is presently derived from Xylan Hemicellulose structural wood part of a birch tree. Its considered a carbohydrate that tastes and looks just like sugar, but per gram, has up to 40% fewer calories. Its also more slowly absorbed by the body, helps prevent tooth decay, has been ruled safe by the FDA, and is used as a sugar substitute in many diabetic diets world wide.

In short, it's a great tasting sugar alternative that's less fattening and good for you.
